I have Ascendant Taurus and Mars Gemini... so I think I can help with this.
Depending on the signs of your planets, it could get confusing (since I have Mars Gemini, I could identify with the Gemini traits, although since I understand that part of my personality, I really understand how I am Ascendant Taurus...)
Maybe posting your birth chart would help us to better help you.
Although, without knowing your chart, I would say go ahead and read the interpretations of each Ascendant and see which one fits you best. But like I say, if, for example, you had a ton of planets in Gemini (or air signs or something) maybe you could get confused thinking you were Ascendant Gemini! But I will tell you, Ascendant Taurus is easy to figure out once you understand it... slow, steady, stubborn, solid... reliable, trustworthy, loyal, true to the word, practical, cautious, friendly, likes physical pleasures such as eating good food, massage, relaxation, sensual sex (!), or anything sensual for that matter (pertaining to the 5 senses). Music, pleasant surroundings, peaceful environment... once all of the basic 5 senses are covered, then you're pretty much good to go! Does that make sense? The Taurus Ascendant person is "simple"... just making sure all the basics are properly covered (nothing lacking). For example, I hate to be hungry! I have a hefty appetite, for good food! And I love good quality, comfortable clothing... another Taurus ASC trait. Think quality, practicality, comfort, security... Physical comfort/security... If you are Gemini Ascendant, you will be much more talkative, social (however you can still be those things even with the Taurus ASC, if you have lots of air or fire signs, etc.) but Gemini is more thin and nimble looking (maybe tall or flexible- I think) and if you are a girl, more tomboyish... however, Taurus ASC is thick, sturdy, even prone to weight gain (because likes to eat!). However doesn't mean you will be fat. I am quite thin and healthy, but very thick bones and sturdy build (stronger than most girls). Taurus ASC has a pretty face (coming from Venus) Gemini... I'm not sure, but of course anyone can be beautiful... I've just heard that about Taurus ASC before (unusually good-looking face). Oh, yes... I see what you are saying. I suppose that is similar to what I meant... that the signs of your personal planets will modify your Ascendant.
Well, I'm not really sure about how to give you advice beyond this point...
I would still think that even though it's Mercury on the Ascendent, it is still in Taurus, and Taurus is still that practical, slow, solid vibe... so not necessarily, quick, flighty, & changeable. It may make you more talkative, or a communicator, or social... but you probably wouldn't be changeable (like a Gemini). Do you sing or have a strong speeking voice? That is also another trait of Taurus Ascendant. But still, I can see how this can get confusing with Mercury... I will do some thinking and see if I can come to some more conclusions. What are your thoughts? How do the descriptions resonate with you? Which one are you leaning more towards?

Earth would be "down to earth"... simple, basic pleasures of life...
Air would be intellectual (of course with Mercury you already would be) but also detached, abstract... less concerned with physical pleasures. More concerned with thinking & keeping yourself busy in the mind.
Do you see where the difference comes in?
Mercury in Taurus on the Ascendant might make you talkative or a thinker, or move around a lot, but you will still be concerned with having your basic 5 senses met (like a Taurus would). You would still be "down to earth", quite simple really, or basic, in your needs, requiring wholesome or practical, good quality & stability over flimsy or changeable. You would just be more mental with all of these things.
If you were Gemini Ascendant, you would not be concerned with the 5 senses (like a Taurus is) and would be less physically oriented, and really pretty much being an intellectual thinker, living in your mind, always thinking things through, remaining quite detached, and preferring changeability, versatility, and socialbility, charm, sarcasm... really without caring so much at all about the "earthy sensations" or pleasures that a Taurus Ascendant cares so deeply about. Taurus is all about having their 5 senses covered! And cautious, practical, and stable! That's it! Slow to anger, but when they do, they can explode and not give up. They are also very attached to things. Resistant to change. Even with Mercury on this influence, I still think the Gemini will be easy to tell because it would have none of these Taurean traits. If you are Taurus ASC, like I say you will just be a more talkative & mental Taurean, but still preferring earthy sensations, and needing them to be met or else you will not be comfortable at all. These earthy "needs" are absolutely essential to the Taurus ASC.
P.S. Also think about the Descendant- In a marriage partner, do you look for a SEXY, deep, intense, emotional, loyal or powerful partner? (Scorpio- opposite Taurus Ascendant) Or do you look for a foreign, different, philosophical, religious, well-learned, traveling, cultured, truth-seeking partner? Honest and natural, blunt/outspoken or probably hard to pin down or to get to commit? A searcher? Seeker? Freedom lover? Independent? Maybe even a teacher? Somebody wise? Or a clownish type personality? Funny and outgoing? Life of the party? Social? High goals and aspirations? Larger than life? Lucky? That would be Sagittarius (opposite Gemini Ascendant). See if any of this resonates with you... I would think one of these seems more like what you would be magnetically looking to complete the other half of you. For me, with Taurus Ascendant, I am magnetically attracted to a deep, loyal, sexy, intense or powerful partner. I'm sure you will be able to see the difference in these two and hopefully one of them pops out to you as the one which seems right.
--And I mean not just "attracted" to... but which one you really NEED. In order to feel safe and secure (Taurus/Scorpio) or entertained and informed (Sagittarius/Gemini). Is security & loyalty what you NEED in marriage, or are you more of a versatile, less attached type of person? More concerned with fun and knowledge? (Sag/Gemini...) When it comes down to the nitty gritty's, are you more concerned with making sure your partner doesn't cheat on you? And that he stays deeply loyal, loving & committed to only you? Or that he is entertaining and fun & knowledgeable? Not worrying about that kind of stuff, allowing him freedom and personal space? Not minding so much if he travels or spontaneously does his own thing away from you? There are major differences. A Taurus ASC woman wants to be able to count on her partner. Wants him home to keep her safe at night and know that he is loyal and true to her. Much more focused on security, loyalty, and those types of basics in a relationship. Wants somebody to depend on who won't just up and leave her some day or hurt or betray her, or not stay true to their word.

Choose a time and add asteroids and points to the chart
Ceresd , Juno, Vesta, Lilith, ...etc,
1.Examine the house position of each planet and asteroid, SEE WHAT FITS MORE WITH EACH HOUSE.
2. Remember a significant event happened to you when transiting pluto hits your decsandant and adjust the time several time.
3. Try to post your chart here.

You do indeed sound like a Mercury Taurean. Of course, there are always exceptions, so do try the rectification method that T-2000 suggests. But for now, I'm glad I was able to help you 
One more thing... the Ascendant is the "role" you played as a young child in your family. If your parents thought of you as the "reliable" or "practical" child, then you are a Taurus Asc. Otherwise, Gemini might be thought of as the "charming" or "intellectual" or "curious" child. Just another thought...

IF the OP is a newcomer to astrology the asteriods are probably best left til last. For rectification the best practise would be solar arcs.
Solar Arcs
Solar arcs are really simple, especially for beginners, just move the Angles, Asc, Desc, MC, IC 1' for each year of your life onto planets and vice versa. Not just used for rectification either. Under age 12 though these interpretations are directed towards family changes, maybe relocation, job changes, illnesses, additions to family etc. Another example is my Pluto is 28' Leo in 7th house and my Uranus is 3' Leo in same house to subtract these and you get age 25. That year my then husband and I had an almighty explosion (Uranus) and transformation (Pluto) of that marriage that started the demise and ultimate ending thereof....

Nice descriptions of Taurus, also physically & typically short necks, top heavy, walk purposefully and solidly.
Gemini Asc child is a 'why' child, why why why why. Feels like square peg in round hole. short attention span very inquisitive and talkative.
Mercury conj Asc if conjunct from 1st house will be more impatient and impulsive, direct and to the point due to Aries being natural ruler of this house.
Remember planet is modified by sign, by house is where it expresses and how is the 'aspects'

Maybe Taurus asc act more mature than gemini asc?
Im gemini asc of the first degrees, and I can be VERY giggly sometimes. The same goes for my best friend who also has gemini asc, but the late degrees. We act like children when we are together, and laugh of everything and rarely act seriously. I mean, we can make fun of everything.
We both have small and a little sharp noses, and our 2 front teeth are kind of bigger than the rest. Like rabbits maybe?
We are both small and slim. But we are different in other ways, like shes got blond big hair, and I have dark brown straight (thick), and she often has a tan while I tend to be rather pale.
We also have the same MC in capricorn, and study the same subject: medicine.
