I thought the male/female signs were just quite simply the Active/passive signs, males being the Active, or as in introvert/extrovert.

For instance, how could Taurus, a sign symbolized by the bull and characterized by its building skills and structural understanding be considered feminine?

Because bulls are peaceful and relaxing animals (until they get angry that is) i.e passive/introvert/feminine.
