Having grown up in a SouthWestern region of the United States, Latin American, especially Mexican foods are a way of life. I was lucky to have many multicultural friends

being a military town, and learn of customs and the beginning of my love affair with foreign foods. Having a Cancer Moon, is should come as no surprise that I belong to many recipe sites and can name all the chefs on the Food Channel and love spending any holiday in the kitchen. Tomorrow, the 5th of May, Mexico's Independence Day will mark the first firing of the grill for the year. Fire roasted chilies and peppers will take center stage. Though not "authentic", many of the flavors in this easy recipe have the taste of Mexico.
Other than the stand by fajitas, Mexican rice, burritos, and Margaritas, I
found this recipe for poblanades I plan on trying. Anyone else planning a Fiesta?
