VODKA SAUCE
1/2 cup salted butter ( 1 stick )
1/2 cup vodka
1/2 tsp crushed red pepper flakes
1 cup Marinara Sauce ( I use Newman's Own Tomato and Basil )
1 cup half and half ( You can also use whipping cream or whole milk, depending on how thick/thin you like it)
3/4 cup freshly grated Parmesan cheese
1/2 cup freshly grated Romano cheese
(You can also use 1 1/4 cups of a pre-packaged grated Parmesan blended with other Italian cheese in lieu of the separate Parmesan and Romano. Just make sure it doesn't have Mozzarella in it!)
MELT butter in skillet over medium heat. Add vodka and red pepper flakes; simmer 2 minutes.
ADD Marinara sauce; simmer 3 minutes, stirring occasionally. Stir in half and half; simmer one minute. Lower heat to "warm". Stir in cheeses; mix well. Serve over your favorite pasta.
Makes 4 to 6 servings.
This is the basic recipe. However, being Sagittarian, I like a little extra "fiery kick" to mine. I use about 2/3 cup Vodka and a teaspoon of crushed Red Pepper.:eek:
